Menu Plan Monday




Mon: Make your own pizza ~ $3.24
Tues: Free For All (leftovers from the weekend)
Wed: Tuna Casserole ~ $4.10
Thurs: Pork Chops, broccoli rice and cheese ~ $5.09
Fri: Beef Fajitas~ $5.24
Sat: Chicken, mashed potatoes, and green beans ~ $4.71
Sun: Roast, rice and gravy, veggies ~ $5.89 (I got the rump roast on sale for $1.69/lb)

Shredded Chicken Burritos

Shredded Chicken

Sorry the only pic I got was the leftovers.

Last weekend we went over to a friends house for dinner and she made Shredded Chicken Burritos. These are very reminiscent of the burritos you might get at Chipotle's. She served them on tortillas with your choice of sour cream, shredded cheese, avocado, rice, corn and salsa. Talk about filling. It is so good my very picky daughter wanted me to make it the very next day. But, I waited one week, and then made it. This recipe made enough to serve at least 8 people.

Crock Pot Shredded Chicken for Burritos or Tacos
adapted from Amy Gonzales

1.5 lbs boneless skinless chicken breasts or tenders
1 can diced tomatoes (I used rotel)
1 pack taco seasoning (I used 1/2 because of using rotel)

Put in crock pot and cook on high for 4 hours, or on low for 6-8 hours. Shred chicken in crock pot using two forks. Serve with condiments of your choice.

Cost to feed a family of 4: $4.18

Mon: Chicken Fajitas

Tues: Shredded beef sammies (using leftover roast from Sunday) and chips

Wed: Lasagna Bake

Thurs: Frozen Pizza (hubby not home tonight so taking it easy)

Fri: Kentucky Bourbon Sirloin Steak, rice and broccoli

Sat: Chicken tacos-recipe to follow

Sun: Roast, mashed potatoes, and green beans

Stay tuned for next weeks menu plan monday. I will be trying something new...$5 dinners, I'm hoping to cut my grocery bill by at least $30 for next week. Let's see if I can do it. If you have any suggestions I am open to them all.
